Fennel as also known as saunf in India is one the important spice
in India. Fennel is used in limited quantities in Iranian, European, Arabic
and Indian dishes. It is used as condiment and culinary spice in
India and aslo for meat dishes, fishes and seafood to have the sweet flavor.
Its flavor has similarity with anise seed. India has a big market for
fennel as mouthfreshner also both in raw as well as roasted form. It is
also the main ingredient in many of the salads.
In Greece, fennel is considered symbol of success while in Rome, young
fennel shoots are known to be used as food.
In India fennel seed is grown mainly in Gujarat, Rajasthan &
U.P. with Unjha being one of the main mandi for it. It is also used in
liquor and perfume.
India export markets for fennel seed includes USA, UAE, Singapore, UK,
Sri Lanka, Malaysia, Japan, Saudi Arabia and other countries. Indians
residing in any part of the world certainly prefer Indian spices so Indian
diaspora itself is a big marekt. It is mainly exported in seed and powder
forms. For powdered form, consumer packing is more preferred by overseas
buyers.
